I discovered homemade guacamole right before we moved to California. Once we arrived and I realized I could get perfectly ripe avocados all the time we were hooked. It's our go-to party food, and you will almost always find it on the menu when we have friends over to watch football or to hang out when the kids are in bed. It's a little harder to find a ripe avocado here in Oklahoma but we often get them in our fruit and vegetable co-op. We just have to be a little patient waiting for them to ripen.
In fact the only bone of contention among our friends is the inclusion of cilantro. (Cilantro haters, you know who you are!) Personally I could eat cilantro on everything, so there's a lot in the recipe. It seems like no one is ambivalent about cilantro-you either love it or hate it.
Feel free to take it out if you can't stand the stuff :)
Guacamole
3 avocados
3 tbsp red onion, minced (shallots work great too)
1 tsp garlic, minced
2 tsp lime juice
3 tbsp cilantro, minced
Cut the avocado in half and scoop into a bowl. Add the lime juice and let sit while you mince the other ingredients. Add the onion, garlic and cilantro to the mixture and stir until combined. Taste mixture and add more garlic or lime juice as needed.
This is a flexible recipe, add chopped tomatoes or change the onion to green onions for something different.
